Canned Apple Spice Cake (Cake in a Jar)

Hi everyone!

As we are going into fall and cooler weather is coming our way I decided to whip up some of these delecious treats for the pantry. They also make great gifts for the holidays. They have become a very popular item to send the troops in care packages!

In my experience these will last for several months if stored propery. We have never really had them around for much longer than that as they are very yummy!

This is another example of how to store food long term (at least to make it through the winter)!

The Recipe:

Spiced Apple Cake in a Jar

Ingredients:

  • (24 oz) of apple sauce, or 3 cups of peeled, chopped apples.
  • 3 eggs
  • 3 cups flour (all purpose)
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1/2 teaspoon salt

Pre-heat oven to 325 F.

Combine all ingredients and stir until consistancy is ‘oatmealish’. With each jar, use your caning funnel to protect the sealing surface and spray some cooking oil into the jar to prevent the loaf from sticking. Fill each jar about half full (remember if you fill them to full, once baked, you will not be able to close them!). Bake at 325F for 30 minutes or until you can insert a toothpick and have it come out clean. When done, turn the oven off and remove one jar at a time, wipe the sealing surface, apply a simmered lid, and secure with a ring just finger tight. As the jars cool you will hear them ‘ping’. Store in a cool dry place.    

When you go to eat one of these you may need to use a butter knife to loosen the sides. Cut in slices to desired thickness (1/2 is a good size) then either eat or lightly sprinkle with you favorite sweetner!
